Sweet Potato Mash


I just love the melt in you mouth texture and rich sweetness of a sweet potato that his been baked to perfection. That texture takes a good couple of hours to achieve and I don't always think far enough ahead to make my dinnertime sweet potato dreams a reality. So, this week I decided to experiment and see if I could get that melt in you mouth texture in just 30 minutes, start to finish. I am happy to say that while it wasn't the exact same texture and sweetness that you would get from baking, it was a close second! Satisfying enough for a busy weeknight when I'm short on time.


Wash, peel, and chop 3 medium sweet potatoes 



 Steaming the sweet potatoes (as opposed to boiling them) is the key to locking in that rich flavor. Fill a pot that has a steaming basket with 2 inches of water. With the lid on, steam the sweet potatoes over medium high heat for 20 minutes or until they are soft and fork tender. 


Using a potato masher, mash the sweet potatoes. Add 1 tablespoon butter, 1/4 tsp cinnamon, and a few dashes of salt. Continue mashing until well combined.



And there you have it! You are just 30 minutes away from a delicious side for a weeknight meal. I tend to like my sweet potatoes on the lighter side, but if you want more butter, feel free to add more. Some people add brown sugar to their sweet potato mash. Ingredients:
3 medium sweet potatoes
1 Tbsp Butter
Salt to taste

Directions:
